Fresh and Healthy Peach Cobbler

It's peach season and growing up in Georgia, peaches are one of my favorite fruits. You know that feeling of biting into a peach on a hot summer day as the juice drips drown your hand...yeah :-) Our dear friends brought over a box full of peaches and after consuming several of these, I knew, I needed to make one of my favorite deserts...peach cobbler.
I love a traditional peach cobbler but I wanted to experiment with healthier ingredients. I swamped the regular white sugar with coconut sugar, added some almond flour, and avoided cooking down the peaches in syrup.
Ingredients
Filling
3 C of fresh peaches, peeled and sliced
2 Tbs of Coconut Sugar
2 Tps of Almond flour
1 Tsp of Cinnamon
1/4 Tsp of Nutmeg
Crumble/Crust Topping
1 C of Flour
1/4 C of Almond Flour
1/2 Tsp of Baking Powder
1/4 Tsp of Salt (omit if using salted butter)
1 Tsp of Cinnamon
1 Tsp of Vanilla
4 Tbs of butter
3 Tbs of Whole Milk
Methods
Preheat the oven to 350 F
In a baking dish, add the filling ingredients and mix well.
For the topping, combine the dry ingredients into a separate mixing bowl.
Melt the butter and set aside.
Add the remaining ingredients to the dry ingredients and mix everything with a spoon or spatula. Make sure everything is well combined and the mixture should have a crumbly texture.
Add this mixture to the peaches and bake for 30 minutes.
Serve warm with your favorite vanilla ice cream.
