Pumpkin French Toast

If you had a small thanksgiving like us, you probably have leftover pumpkin purée waiting to go bad. This is an easy weekday breakfast that both kids and adults will love!



Ingredients:

1 egg

2 Tbs of Pumpkin Purée

1 Tbs of half and half (or milk)

1/2 Tsp of ground cinnamon

1/8 Tsp of ground nutmeg

2 slices of bread of choice


Methods:

  1. Combine all the ingredients and beat well.

  2. Cut the bread slices in half and coat with the French Toast mixture.

  3. In the heated skilled, cook with some ghee until browned.

  4. To make these Christmas ready, we sprinkled some Christmas Tree sprinkles and topped it off with maple syrup.


I would ideally use sourdough for this but y’all know I am all about the convenience of home cooked meals for busy families. So, use the bread you have! Make it fun, cook with your kids, and don’t worry about perfection...EVER!
